Kasi’s kitchen: mindful mint chocolate chip smoothies

National Green Juice Day has come and gone, but it’s still just as perfect a time as any to honor our health with mindful eating and drinking.

Trimesters move quickly, and students may find it difficult to eat mindfully since sleep and studying take precedence. It can be all too easy to get lost in the hustle and bustle of college life and forget to take care of our bodies.

Time and money are of the essence, and many students do not have the resources to buy café-made green juices or smoothies, but would like to have the drink in an instant. This recipe is for a smoothie that can be made in a blender, since juicers can cost hundreds of dollars.

Frozen fruit is best, and should take the place of ice. Trader Joe’s, on Washington Street, has reasonably priced fruits and vegetables, but feel free to use whatever you have on hand.  Low-cost produce and easy preparation make smoothies an easier way than ever to eat mindfully. Once you have the basics down almost anything can be added or subtracted from your smoothies, making your choices almost endless.

Basic ingredients:

  • 3 cups of frozen or fresh fruit (add ice if your fruit isn’t frozen)
  • 2 cups of any liquid (water, coconut water, nut milk, dairy milk)
  • 2 cups of leafy green (spinach, kale, mint)

Mint chocolate chip green smoothie:

  • 1 cup almond milk
  • one 1/2 frozen banana
  • 1 cup spinach
  • one 1/4 cup fresh mint leaves
  • one handful cacao nibs/powder or chocolate chips

Blend until everything is incorporated into a smooth consistency, turning off the blender and stirring if necessary, and enjoy your flavor-packed health smoothie.
